Crispy Roasted Potatoes
Aug 02, 2022We love preparing these crispy, roasted potatoes as a delicious side dish to accompany a simple meal or meat, fish, or poultry with a side salad. Enjoy them dipped into tzatziki, sour cream, or ketchup!
This roasted potato recipe is versatile. You can use whatever potato you enjoy (including sweet potatoes) but I find that Russet potatoes get the crispiest! I use a simple spice blend of salt, pepper, and garlic powder but you can add any spices you like or fresh herbs if you have them available to you! I love dipping the potatoes in tzatziki when enjoying a Greek inspired meal or sour cream and ketchup when eating them alongside steak and salad!
ROASTED POTATOES
INGREDIENTS:
- 3 medium (454g) potatoes, sliced or cubed
- 1 tablespoon olive oil
- 1/8 teaspoon each of salt, pepper, and spice of choice (eg. garlic powder, oregano, etc.)
NOTE: the measurements for this recipe don't need to be exact. So intuitively dial the portions up or down based on the amount of potatoes you are looking to prepare. I find this amount servings 2-3 people depending on how much you love potatoes!
DIRECTIONS
- Slice the potatoes in wedges or cubes
- Toss in olive oil, salt, pepper, and spices
- Place on a parchment lined baking tray and bake at 400 degrees F for 40 minutes flipping the potatoes at the halfway mark.
- Serve with a simple dip like tzatziki, ketchup, or sour cream and complete the meal with your choice of protein and salad.
DIETITIAN TIPS
Many people wonder if white potatoes are less nutritious than sweet potatoes. Both white potatoes and sweet potatoes are nutritious carbohydrate sources. Sweet potatoes have slightly more vitamin A and white potatoes have slightly more potassium. These differences are minor so choose the potato you enjoy most or is the better fit for the meal you are preparing!
