Greek Salad
Aug 02, 2022This simple Greek salad recipe is the perfect match for souvlaki or kebabs, roasted potatoes, or warm pita.
Greek salad is one of my (Courtney) favorite salads of all time! I like to serve my Greek salad with kebabs for protein and potatoes or pita for carbohydrate. GREEK SALAD

INGREDIENTS:
DRESSING:
- 2 tablespoons olive oil
- 1½ tablespoon red wine vinegar
- 1 teaspoon dijon mustard
- ¼ teaspoon spices of choice (eg. oregano, mint, basil)
- salt and pepper to toaste
SALAD BASE:
- 1 cucumber, diced
- 2 cups cherry tomatoes, halved
- 2 bell peppers, diced
- ¼ red onion, sliced
- ¼ cup olives
- ½ cup (60g) feta, crumbled
DIRECTIONS
- Make the dressing by whisking it a small bowl or adding the ingredients to a small jar and giving it a shake. Let the dressing chill in the fridge while you prep the vegetables!
- Wash, chop, and slice the vegetables.
- Combine the vegetables with the feta and olives.
- Toss the salad with the dressing. Enjoy!

Enjoy this salad as a complete meal with a source of protein like our garlic shrimp kebabs and a source of carbohydrate like our roasted potatoes or warm pita with tzatziki!
