Pumpkin Spice Blender Muffins

Delicious and healthy pumpkin muffins made in a blender for easy clean up! These muffins are naturally gluten-free with the use of oat flour and oil-free with the addition of pumpkin puree and Greek yogurt for moisture. 

These pumpkin spice oat muffins will have your kitchen smelling like fall. Our dietitians love that these muffins are loaded with fibre with the addition of oats, pumpkin puree, and walnuts. These healthy muffins are made extra wholesome with a few ingredient swaps.

  • Oat flour. Instead of using white flour we used oat flour made by blending quick oats in a blender. 
  • Greek yogurt.  Greek yogurt is used as a substitute to add moisture while increasing the protein and calcium in the recipe! 
  • Pumpkin. Pumpkin puree adds moisture while boosting the recipe with fibre and vitamin
  • Walnuts. We used walnuts for crunch but feel free to use other toppings like chocolate chips, pecans, or pumpkin seeds.  

Our Registered Dietitians recommend using a recipe like this in one of several ways:

  • As a pre-workout snack that contains carbohydrates to maximize energy!
  • As a baby-led weaning snack for infants (just leave off the walnuts to avoid the crunchy bits that may be a choking hazard at this age)
  • For active kids who need a snack to energize them for sports and other activities (eg. after school snack before an activity or an energizing snack for a tournament)
  • Paired with a protein source like hard boiled eggs, cottage cheese, Greek yogurt, or a protein shake for a filling breakfast or snack!
