Protein Peanut Butter Energy Bites

Healthy Protein Energy Bites

No bake protein pumped peanut butter energy bites that taste like cookie dough with a chewy texture. Our dietitians designed these healthy protein bites with nutritious ingredients like flax seed, chia, and oats for the perfect no bake snack!

Our Registered Dietitians enjoy having these protein-infused energy bites available in the fridge or freezer as a snack or dessert. Our nutritionists even suggest taking them with you on-the-go or for your next road trip as a nutritious snack!

  • Peanut butter: Our nutritionist prefer natural peanut butter but you can use any peanut butter or a different nut butter like almond butter, cashew butter, or mixed nut butter. We find the subtle taste of cashew butter makes these taste even more like cookie dough!
  • Oats: We used quick oats but any oat will do. Be sure to use certified gluten-free oats if you are Celiac or gluten intolerant. 
  • Sweetener: We used honey but you can other liquid sweeteners like maple syrup. 
  • Ground Flax Seed & Chia Seeds: This provides a boost of fibre and nutritious fats to keep you full for longer!
  • Protein powder: We used vanilla whey isolate but you can swap for any protein powder like unsweetened collagen peptides or plant-based protein powder.
  • Mix-Ins: We used chocolate chips but you can use any mix-ins like chopped dark chocolate, nuts, seeds, dried fruit, or extra coconut!

 

PROTEIN PEANUT BUTTER ENERGY BITES

 

 

INGREDIENTS

  • ½ cup (120g) natural peanut butter
  • ¼ cup (80g) honey
  • ½ cup (60g) protein powder
  • ⅓ cup (30g) ground flaxseed 
  • ½ cup (40g) rolled oats 
  • ¼ cup unsweetened shredded coconut
  • 1 tablespoon (10g) chia seeds
  • ¼ teaspoon salt
  • 2 tablespoon (25g) mini or regular chocolate chips

 


 

DIRECTIONS

  1. Add the natural peanut butter and honey to a large mixing bowl and stir to combine. I like to use a food scale to weigh the ingredients which saves dishes! If needed, you can microwave the peanut butter and honey in 15 seconds intervals to make it easier to mix.
  2. Next, add the dry ingredients including the protein powder, ground flaxseed, rolled oats, shredded coconut, chia seeds, and salt. Mix until well combined. You may need to use clean hands to work the mixture into a dough. If the mixture is too wet you can add an additional sprinkle of ground flax and/or oats. If the mixture is too dry, you can add an additional scoop pf peanut butter.
  3. Add the chocolate chips and mix until evenly distributed through the dough.
  4. Measure about 2 tablespoons of the dough and roll into a ball. Continue with the remaining dough.
  5. Store in the fridge for up to a week or in the freezer for up to 2 months.
